No. You have to not take it, then take it when you’re whatever level you want the reward to be.

Sadly, no.
Missions accepted in Normal and TVHM have set levels for their rewards no matter when you complete them.
If you pass main storyline in TVHM it will put you into “Playthrough 2.5”, where all side misdions that you have not accepted yet will scale to 50 when you accept them, and their reward will be at 50.
In UVHM, missions will be at whatever level you are when you accept them, and their reward will be at that level also.
What @FlamesForAll said: once you accept a mission, the reward level is locked.
I’ve also noticed that some side quests in TPS do not seem to rescale properly after completing main story, even if you haven’t accepted them. I’m currently trying various things out between different characters to see if it’s reproducible, or just some odd glitch that hit me the first time through normal and true modes.

Yeah we have all made those mistakes… I was in Concordia sorting some weapons and gear and allowed my nephew to join my game and wasn’t paying him any mind… As I headed to the fast travel he just did except a couple if missions I was saving and bam!!! Save pole initiated!!! Lol…

Correction. I am dead wrong. All missions in UVHM will be scaled to your character’s current level.
In normal or TVHM, I believe the difficulty level is pre set regardless of character’s level.

There’s a range of possible levels for each mission. If you’re below the minimum, it will be the minimum; if you’re in between, it will be your level, and if you’re over the maximum, it will be the maximum. Regardless of which way the level is set (NVHM & TVHM versus UVHM), once you accept a mission, the reward level is locked to the mission level regardless of when you subsequently finish the mission and turn it in.
